Rinse the orange, rub dry. Remove the zest from the orange very thinly, cut the zest into super-thin strips and weigh out 30 g. (Alternatively, use a zester).

Mix the pulp with the orange juice, the orange zest and the preserving sugar in a saucepan. Bring everything to a boil on 3 or automatic heat 9-12 while stirring and let it bubble for at least 3 min while stirring continuously on the same stove setting. Remove the saucepan from the stove and skim the fruit mixture.

On the spot, fill the fruit mixture to the brim into prepared jars. Close with twist-off lids, turn to the other side and leave on the lid for about 5 min, turn to the other side, cool and store cooled.
