Instructions:

For the orange parfait, whisk the egg yolks and sugar in a double boiler until creamy.

Remove from heat and continue beating until the cream is cold.

Mix the orange juice with the sugar and stir into the cream.

Whip the cream until stiff and gently fold in.

Line a loaf pan with plastic wrap and pour in half of the cream.

Spread the orange marmalade over it and cover with the second half. Cover with plastic wrap.

Freeze in the freezer overnight.

Turn the orange parfait out of the mold before serving and cut into slices.
