Orecchiette Pasta with Goat Cheese

Instructions:

Put flour in a large enough bowl, add water, mix, knead into a smooth, soft dough. Prepare immediately (*).

Shape orecchiette: form pencil-thin rolls of dough. Cut into pieces about 1cm long, press a little flat. Spread evenly with a serrated kitchen knife, turn rough side out.

Make orecchiette: make orecchiette six to eight minutes in boiling salted water, drain.

Sauce: warm olive oil. Steam garlic, tomatoes and olives over medium heat for about five minutes.

Mix the sauce with the hot orecchiette, sprinkle with goat cheese and serve immediately.

Serve with: Salad

(*) prepare only a little dough at a time, because the dough quickly becomes brittle. Wrap the rest of the dough in a damp tea towel to keep it supple.

Tip: use ready-made orecchiette instead of homemade. Prepare according to the instructions on the package.
