Instructions:

Make potatoes the day before in the peel for 20 min, peel off the peel. One day later finely grate potatoes, knead together with egg and flour. Season dough with salt and season with pepper.

Peel tomatoes, remove seeds, dice. Chop parsley, cut spring onions into rings. Sauté tomatoes, leek and parsley in oil. Add juice of one lemon, turmeric, clear soup, stir until the liquid has evaporated. Season with salt and cayenne pepper. Divide dough into 10 portions, flatten on floured palm, top with filling and press together to form cookies. Fry in 3-4 tbsp. hot oil for 4 minutes on each side. Serve hot or cooled with parsley leaves.
