For the oven potatoes, peel the potatoes and place them on a baking tray lined with baking paper.

Cook in the oven at 200° for about 1 hour. In the meantime, peel and dice the onions. Dice the bacon as well. Finely chop the chives and mix with sour cream.

Fry onion and bacon cubes in a pan, add diced peppers. Cut potatoes in half and hollow out. Mix the potato mixture with the pan contents, finely diced Gouda and sour cream.

Season with salt and pepper. Pour the mixture into the hollowed out potatoes, sprinkle with Parmesan cheese and bake in the oven until a golden crust appears.
