Add spelt and wheat flour, yeast, 200 g water, olive oil, 1 tsp salt and sugar to the mixing bowl and knead for 2 minutes / dough stage until smooth. Transfer the dough into a bowl, form into a ball and let rise covered in a warm place for about 30 minutes. Clean the mixing bowl.
In the meantime, preheat the oven to 200 °C, grease the loaf pan with oil. Coarsely chop the Parmesan and chop in the mixing bowl for 3 seconds / speed 6, transfer to a bowl. Peel the shallot and garlic, add to the mixing bowl and chop for 2 seconds / speed 6. Weigh in the butter and saute both for 2 minutes / Varoma / speed 2.
Add the chopped Parmesan and olives to the sauteed shallot in the mixing bowl and blend everything to a paste in 5 seconds / speed 7.
Roll out the yeast dough on the floured work surface into a rectangle (approx. 45 × 25 cm) and cut into approx. 7 × 7 cm pieces. Brush the dough pieces with the cheese-olive paste and layer them tightly next to each other in the baking dish. Bake the bread in the oven (center) for about 45 minutes. Serve oven-fresh folded bread with olives from the Thermomix warm from the oven.
