Cut the pork into cubes.
Heat the fat in a roasting pan and brown the meat in it. Add onions, apples, sugar cubes and spices. Extinguish with white wine and cook in a heated oven at 175 °C for about 2 hours.
Garnish: Black salsify and carrots.
Tip: Cook only with high-quality spices – they are the be-all and end-all in a good dish!
