For the oven ratatouille, preheat the oven to 180 °C. Cover a baking tray with baking paper.

Wash and clean the vegetables and cut them into even pieces. Spread them on the baking tray. Pluck the herbs from the stems and roughly chop and sprinkle over the vegetables.

Pour a good dash of olive oil over them and season with salt and freshly ground pepper.

Bake the oven ratatouille in the preheated oven for about half an hour.
