Remove the peel from the potatoes, cut into slices and simmer in salted water for ten minutes, then drain. Rinse oyster mushrooms, cut into large pieces and fry in clarified butter. Season with salt and pepper. Blend whipping cream with garlic, cheese, eggs, salt, pepper and thyme. Cut chives into rolls and fold in. Spread half of the potato slices evenly in a greased gratin dish. Place mushrooms on top and cover with remaining potato slices. Pour the egg yolk over it and bake the gratin in the oven until golden brown.
