Instructions:

Rinse spinach, drain and chop into small pieces.

Place all ingredients in a large enough bowl and mix by hand until a smooth dough is formed.

Grease a thick-bottomed frying pan with ½ tsp oil and heat. Pour a soup ladle full of batter into the frying pan, spread evenly with a spatula to form a circle about 20 cm in diameter and bake for about ½ min.

Carefully turn to the other side and bake on the other side also until light brown.

Repeat the process until the batter is used up and all the pancakes are baked.

Serve warm with yogurt and pickles.

There is a wild spinach species in Central Asia – that’s why it is believed to have originated there.
