A simple but delicious cake recipe:

Pancake batter: dissolve butter. Put flour in a suitable bowl, mix with salt and sugar, add milk and cream, stir until all the lumps are dissolved, add egg to the mixture, add melted butter and zest, mix well, rest for 30 min.

Filling: cream butter with powdered sugar, add cream, vanilla sugar, egg yolks, curd cheese, salt and lemon zest.

Whip the egg whites to egg whites, mix with the sugar into the mixture and fold in the berries.

Heat a little butter in a small crêpe or Teflon pan, pour in a little pancake batter, swirl the pan a little to distribute the batter evenly, then fry the pancakes, turn to the other side and finish baking. Do the same with the rest of the dough.

Fill the pancakes with the berry mixture, roll them up and place them in a buttered baking dish, bake briefly at 180 °C, cover with the whipped topping and bake for about 20 minutes. Garnish with mint leaves and serve warm.
