Pancakes with Red Beans

Instructions:

Soak the beans overnight in cold water. Drain, add cold water and bring to a boil. Boil for about 3 hours until they are completely soft (during this time, repeatedly add fresh water). Strain the cooked beans and while still hot, pound them together with the sugar in a mortar until the shell separates from the beans. Set aside. For the pancakes, mix flour, milk, sugar and yeast until thick. Beat the eggs until very stiff and gently stir into the mixture. Heat a coated pan, butter it and wipe it out again with kitchen roll. Then heat the pan again and pour a small ladle of batter into the pan. Swirl pan slightly and bake pancakes until golden brown on both sides. Remove, set aside and bake the remaining pancakes in the same way. Then fill 2 pancakes each with the bean paste and serve.
