For the pancakes, mix flour, milk and egg with a whisk until smooth. Season with salt and some chopped dill. Heat some oil in a (preferably coated) pan. Pour in half of the batter, spread evenly and bake a thin pancake, turning once, until golden brown. Bake the second pancake in the same way. For the mustard sauce, first stir the sour cream until smooth, then add the mustard and honey and season to taste. Cover the pancakes with smoked salmon and roll each one up. Cut into decorative pieces on preheated plates and arrange with the mustard sauce. Serve the pancakes warm.
