Instructions:

1. rinse potatoes thoroughly, put them in a saucepan, add water up to half, sprinkle with sea salt, bring to a boil and place a folded kitchen towel between the saucepan and the lid. Make potatoes at high temperature until they are cooked and the water has evaporated. You should hear the salt crackle at the bottom of the pot.

For the red mojo, chop the garlic, remove the seeds from the chili peppers, cut the peppers into small pieces. Finely grind both ingredients with the spices and 1/2 tsp salt in a mortar. Soak the bread in water, squeeze it, crush it and put it in a small bowl with the herb mixture. Mix everything well, add oil and vinegar, dilute with a little water.

For the cilantro mojo, remove the seeds from the bell pepper and chop with the garlic, cilantro and parsley leaves. All with 1/2 tsp salt and cumin in a mortar form and grind finely. Add oil and vinegar. Dilute the sauce with a little water.
