Instructions:

For the bell bell pepper stew, chop the onion and garlic and sweat in a pan with hot olive oil until translucent. Add the chopped peppers and sauté over medium heat for about 10 minutes.

Meanwhile, drain the kidney beans and add to the vegetables. Add the strained tomatoes and water to the pan.

Add in the couscous as well and simmer again on low for about 10 minutes.

Season with the soup seasoning and add a good drizzle of olive oil to finish.
