For the tomato jam, wash jars and lids, boil and disinfect with a few drops of rum. Cut the tomatoes into pieces. Finely grate the ginger. Wash lemon, grate peel and squeeze juice.

Mix the tomatoes, ginger, preserving sugar, lemon zest and juice in a saucepan. Cover and let stand for 1-2 hours. Then boil for 2 minutes, mash with a potato masher and strain through a float (or sieve).

Add limoncello and boil for another 4 minutes. Pour as hot as possible into the prepared glasses and seal immediately.
