Preheat the oven to 205 degrees.

Place baking powder, flour, salt, and cheese in the baking bowl of a food processor fitted with beaters* (Food Processor) form and blend. Add the butter flakes and pulse until the mixture has a semolina-like consistency.

Transfer this mixture to a large enough bowl, add the chive rolls and press a bulge in the center. Form the sour cream or crème fraiche in the center and with one hand roughly mix the dry ingredients with it, creating a dry crumbly mixture.

Rinse hands, pat dry and dust with flour. Shape the dough onto the lightly floured surface and gently knead a few times until a ball of dough forms. Roll the dough out to about 1 1/2 inches thick or press apart. Cut out cookies with a round cookie cutter (Petra: 5 cm ø). Press the remaining dough together repeatedly, flatten and cut out cookies repeatedly.

Place the cookies on a baking sheet lined with parchment paper, brush with melted butter, sprinkle with Parmesan cheese and grind with coarse black pepper.

Bake the scones for about 25 minutes, until they are nicely risen and golden brown.

Scones rise super and have a bready texture.

Excellent snack to accompany wine!
