Instructions:

For the passion fruit tarts, soak the gelatin in cold water. Prepare a muffin silicone mold or conical vessels.

Boil the passion fruit juice with the gelatin and set aside. Whip the egg whites with the sugar until they form beaten egg whites.

Whip the Guma Pâtisserie Cream until semi-solid and fold into the beaten egg whites with the passion fruit juice.

Pour into the prepared molds/vessels and chill in the refrigerator for at least 6 hours.

Puree the passion fruit and sugar with a hand blender.

Cut out a round, small base from the sponge cake for each serving and arrange the chilled and overturned tartlets on top.

If desired, pour a little fruit sauce over the passion fruit tartlets.
