The romantic sounding “Maccheroni alla chitarra” are zar only ribbon noodles from Abruzzo, but they are also still made today – true to its name – with the traditional “pasta guitar”. It will surprise you, but “Maccheroni alla chitarra! are not traditional macaroni, but long ribbon pasta. Although today we think of macaroni or maccheroni as short tubular pasta, the term was originally used in Italy to refer to pasta in general. This includes, depending on the region, many different types of pasta shapes in a wide variety of sizes and lengths. Particularly in the case of homemade fresh pasta, in many regions you will find macaroni types that have nothing at all to do with the short, thick, industrially produced tubular pasta.

Simple technique: For centuries, cooks in Abruzzo have been making ribbon pasta with a device called a “chitarra” (in German: guitar). The “Chitarra” is actually reminiscent of the musical instrument from which it got its name. In fact, the “pasta guitar” consists of a wooden box over which metal strings are tightly stretched. The dough is pressed against these wires with a small pasta walker, so that the pasta falls in strips onto the floured board below. The technique is extremely simple, but with its help it is possible to produce perfectly uniform ribbon noodles.
