A great pasta dish for any occasion:
Pile the flour on the baking board and in a well form eggs and salt. Mix the flour with the egg from the edge with your fingertips. Form a firm, pliable loaf. Leave to rest for 30 minutes under a wet dishcloth. Divide the dough into 2 or 3 pieces and roll out in order on floured surface with pasta walker until very thin. using a pasta machine make the pasta.
Rinse and pat the basil leaves. Crush them with the peeled garlic, the pine nuts and a little bit of oil in a mortar or grind them in a hand mixer until you have a thick green paste. Add the remaining oil and the grated parmesan cheese. Make the pasta al dente and pour the sauce over it.
