For the pasta with kumquats and thyme, cook the pasta al dente, strain and set aside.

Peel the kumquats, cut into bite-sized pieces, blanch in the salted, still boiling pasta water.

Heat the butter in a saucepan and fry until fluffy, sauté the kumquats. Finely chop thyme and add. Squeeze orange over kumquats.

Mix in pasta and season with salt and pepper. Whip cream until stiff and fold into pasta.

Serve the pasta with kumquats and thyme garnished with plucked basil leaves.
