Make lentils about 25 min, pour off water. In the meantime, chop shallot and cilantro and set aside. Score cherry tomatoes crosswise, dip briefly in boiling water and quench. Peel off the skin. Chop half of the dill sprigs.

Unroll pasta dough precisely and cut out 12 cm dia. rounds (2 per unit(s)). Cook the pasta for about 4-5 minutes in salted water until al dente. Sauté shallot in a little butter, add lentils and coriander and season spicily.fry cherry tomatoes in remaining butter. Heat sauce and season with wasabi.

Lift dough rondelles out of water, rub dry and arrange one rondella each on heated plates. Place a tranche of salmon on each, sprinkle with dill. Spread hot lentils evenly on top. Place one slice of salmon on each, sprinkle with dill.

Place a pastry rondelle on top. Whisk hot sauce with blender until creamy and pour over ravioli. Garnish with cherry tomatoes and dill. Serve immediately.

Tip: If you don’t like cilantro, you can omit it.
