For the pasta dough:





Instructions:

Make a smooth pasta dough with egg and flour and let it rest – covered with a wet tea towel – for 20 minutes.

Cut the dough into 2-3 pieces and roll out to the thickness of the back of a knife.

Roll up the dough sheets, cut 2 – 3 mm thick noodles from them, unroll them, and let them dry a bit.

Boil water with oil and salt, cook the noodles in a few minutes until al dente. Drain well and put in a bowl.

Dissolve butter in a small frying pan. Add cheese, when it starts to dissolve, season with nutmeg and pepper. Pour over pasta, mix well in bowl.

Arrange on warmed plates and shave enough truffle over the top.

Serve the pasta hot with white truffle.
