Zucchini clean, rinse, cut into slices. Rinse tomatoes, dice.

Cook tortiglione pasta in salted water for about 8 minutes. Steam zucchini and tomatoes in hot oil until soft. Fold in pasta, season with salt, pepper and juice of one lemon. Stir in grated Parmesan cheese and a little basil.

Tip: Zucchini are a type of squash and therefore low in calories, rich in vitamins and easy to digest – just the thing for a light meal!
