For the peanut butter banana pancakes, whisk together flour, eggs, milk, mineral water, salt and nutmeg until smooth.

Allow to swell for half an hour. Peel bananas, cut into slices and sprinkle with lemon juice. Melt butter in a pan and fry pancakes in batches.

Spread pancakes with peanut butter, top half with banana slices and fold together.

Before serving, sprinkle the peanut butter banana pancakes with powdered sugar if desired.
