For the peanut soup with potato pralines, peel and coarsely chop the onions, garlic, ginger, then chop the lemongrass and apples and add.put everything in a hot pot with a little sesame oil (only a little, because the rest will be needed later) and sauté until translucent (can have a light brown color).

Dust with cumin, coriander, cardamom, pepper and fry very briefly, then deglaze with vegetable stock and simmer gently for about 30 minutes.Add peanut butter and coconut cream and bring to the boil properly one last time.

Put everything in a kitchen blender or bar blender and puree until fine. While blending, slowly run the sesame oil into the blender. Finally, finely puree and add a little salt to taste if necessary.

For the potato pralines, press the potatoes through a potato ricer, mix with butter, spices, egg yolk and enough flour to make a dough that is not too loose. With floured hands, remove small balls from the mixture and roll into dumplings.
