For the pear-cheese-leek strudel, first wash and core the pears and cut into small cubes. Also wash the leeks and cut into fine rings. Grate the cheese.
Mix the pears, leeks, cheese, eggs, salt and pepper.
Roll out the strudel dough, put the filling on it and roll up the strudel. Brush with the beaten egg. Place in the oven at 200 °C for about 20 minutes.
Portion the pear-cheese-leek strudel and serve.
