For the pear mustard, heat pear juice, white wine vinegar and sugar until sugar is dissolved. Peel and dice the pears. Poach 150 g pear cubes in the syrup for 2 min., lift out and set aside.

Simmer remaining pear cubes in syrup uncovered for 45 min. Mix mustard powder with the syrup, stir into the mixture with the poached pear cubes and cook for another 15 min. Pour the pear mustard into sterile jars, seal them on the spot and refrigerate the pear mustard.
