The dough: eggs, milk, clarified butter, lemon zest and flour mix well. The filling: Beat the egg yolks and sugar until creamy, add the flour. Boil milk and pour to the egg cream, then stir at low temperature to a thick cream, add cinnamon and lemon zest. Rinse pears, cut into quarters lengthwise, remove core. Cut quarters lengthwise into narrow wedges, drizzle with lemon juice. Gently melt sugar in a frying pan, do not stir. As soon as sugar begins to brown, add pears and sauté for 2 minutes until soft.
