For the pickled calamari, mix the marinade the white wine vinegar with white wine, olive oil, salt, pepper and a pinch of sugar. Remove the seeds from the peppers and cut them into strips, as well as the onions. Heat the marinade and simmer the onions together with the peppers for about 25 minutes on low heat.

Add the calamari cut into strips, boil vigorously once and then let cool slowly at room temperature (do not refrigerate immediately or the calamari will not soften!). Season the pickled calamari again before serving.
