For the pig tails lucky charms, beat the egg whites until very very stiff. Sift in the granulated sugar really very slowly while continuing to beat.

Then add the food coloring and beat until everything is pink. Then very carefully fold in the sifted confectioners’ sugar with a spatula.

Fill the mixture into a piping bag and pipe “pig tails”, i.e. squiggles, onto a baking tray lined with baking paper. Let dry very slowly at 140 degrees hot air, jam a wooden spoon style in the oven door to keep it open a crack.

Makes two baking sheets full. Let pig tail good luck charms cool on paper and only then peel off.
