In a heavy saucepan that retains the temperature well, boil enough water so that later the long-grain rice is just covered with it. Add salt, trickle in the long-grain rice, and pile it up into a cone. The top grains of rice should just be covered with water. Skim off any excess hot water.

Stir and make over high heat for 10 to 12 minutes. Pull saucepan off the stove, cover well and let swell for a quarter of an hour.

Melt butter in a frying pan. Fry the sausage meat, which has been cut into pieces with a fork, and add it to the long grain rice, which has been cooked in the meantime. Finally, add the grated Parmesan cheese. Bring to the table hot.

This dish is good for a party with a lot of guests (and a lot of red wine). For the mixture always use 1/5 of the rice quantity butter, 2/5 sausage meat, 1/5 grated parmesan.

Our tip: use your favorite red wine for cooking!
