For the pineapple cake, first drain the pineapple, reserving the juice. Cream butter, sugar and vanilla sugar. Gradually stir in the eggs, grate the lemon zest into the batter. Add flour, starch and baking powder and mix until smooth. Gently fold in pineapple chunks, reserving some for decorating.

Pour the batter into a greased loaf pan. Bake at 170 °C for about 90 minutes. After half the baking time, cut the dough lengthwise in the middle so that it tears evenly.

At the end of the baking time, let the cake cool slightly in the pan, then turn it out onto a wire rack. Mix the powdered sugar and 4 tablespoons of the pineapple juice until smooth. Coat the still warm pineapple cake with it and decorate with the remaining pineapple.
