For the pineapple confectionery, chop the chocolate and melt it together with margarine, coconut fat and whipped cream in a water bath. Stir the mixture until smooth and refrigerate for 2 hours.

Mix the semi-solid truffle mixture with a hand blender for about 5 minutes, slowly adding the liqueur. Fold in chopped pineapple and spread mixture on a 12 x 24 cm baking sheet lined with parchment paper and refrigerate overnight.

Melt the white chocolate in a water bath and let it cool down. Cut the confectionery mixture into 2 x 2 cm squares, pull through the chocolate with the help of a fork and place on a baking tray lined with baking paper. Finally, sprinkle the pineapple confection with coconut flakes.
