For the mini foam rolls, first prepare the foam rolls. To do this, preheat the oven to 180 °C, roll out the puff pastry and cut/roll into thin, even strips.

Wrap over the foam roll form and brush with water. Place on a baking tray and bake for about 10 minutes. Meanwhile, prepare the filling.

Heat some water with crystal and vanilla sugar and spin the sugar, mix with food coloring. Beat egg whites over hot steam (must not boil) until foamy.

Stir in spun sugar, lemon juice and beat until stiff. Pour snow into a piping bag and fill into the overcooled foam rolls. Serve sprinkled with powdered sugar.
