A simple but delicious cake recipe:

Mix flour, almond kernels and salt. Cut the butter into pieces and rub finely with the flour mixture. Then add the water and knead everything together to form a dough. Since the dough is sticky, you should place it between two large sheets of cling film and only then roll it out. Place the dough in a cake springform pan (28 cm ø). To do this, remove the top sheet and place the greased springform base on top, invert and remove the second sheet.

For the topping, mix the marzipan mixture with amaretto in a small baking bowl and spread evenly on the dough. Place the washed, pitted and halved plums on top like a roof tile, sprinkle with a little bit of cinnamon as well as the pistachios. Bake the cake at 200 °C (convection oven) for 30 minutes (for all other types of oven, the baking time is extended by about 5-10 minutes).

After cooling, sprinkle the sugar over the cake and dust with a little powdered sugar and the rest of the cinnamon.

Tip: If you don’t like spelt flour, you can cook a normal shortcrust pastry with wheat flour.
