Plum Chocolate Cake with Cinnamon Sprinkles

Instructions:

Wash the plums, cut them in half, remove the seeds and quarter them. For the crumble, cut the cold butter into pieces. Mix them with flour, sugar and cinnamon with your fingers, crumbling them until you get nice crumbles.

Separate the eggs. Wash the lemon and grate the zest of one half. Cut the butter into small pieces and cream it with 60 g sugar, vanilla sugar, salt, lemon zest and cinnamon. Gradually stir in the egg yolks.

Beat the egg whites until firm. Beat the egg whites until they turn whitish. Then gradually add 140g sugar and continue beating until the snow is nice and firm.

Sift the flour with the baking powder. Sift the cocoa as well, so that there are no holes in the cake. Mix the sifted cocoa with rum and set aside.

Fold a small portion of the snow mixture into the egg-butter mixture until well blended. Then gently fold in the remaining amount. Add the flour and milk alternately.

Spread half of this cake mixture on a baking sheet lined with baking paper. Quickly stir the cocoa-rum mixture into the second half. Then spread this cake batter on top of the first layer of batter. Run a fork through the two masses to create a pattern in the batter.

Now place the plums on top of the dough. Sprinkle the crumble on top.

Bake the plum and chocolate cake with cinnamon crumble in a preheated oven at 180°C for about 30 minutes.
