For the plum jam marzipan strudel, line a baking sheet with baking paper and unroll the puff pastry with its own paper on it.

Preheat the oven to 175 degrees and toast the almonds in a pan without adding fat. Roughly grate the marzipan and fold the almonds and marzipan into the plum puree.

Spread the filling on the puff pastry, leaving a 2 cm border all around. Roll up the puff pastry from the long side, press the ends tightly together, whisk the egg yolk and milk and brush the pastry with it.

Cut the pastry roll every 10 cm diagonally and bake in the oven for about 40-50 minutes. Cover the plum jam marzipan strudel with aluminum foil for the last 15 minutes.
