Let the yeast rise in the warm milk together with the sugar.

Sift the flour into a suitable bowl, make a dent in the center and pour the yeast mixture into it as soon as it is creamy. Make into a dough, then cover and let rise. Form a hollow in the dough and add the rest of the milk, the butter, the egg and the salt. Knead everything into a soft dough and divide it into about 20 pieces. Let it rest for another 30 minutes with the lid closed.

Next, shape the dough pieces into round patties. Put a little cheese on one side of each of the twenty patties shape, fold the other side over and press the edges firmly together. Place the pogacas on a greased baking sheet and rest for a final half hour. Next, brush the pastries with the egg yolk and perhaps sprinkle a little sesame seed on top. Bake in a heated oven at 200 °C (gas mark 4) for 20 to 25 minutes until done.
