Instructions:

For the Poke Bowl with salmon, baby spinach and chili mayonnaise, pat the salmon dry. First cut into slices, then into strips and finally into 1 x 1 cm thick cubes and refrigerate.

For the marinade, mix all the ingredients together well, pour over the fish and leave to marinate refrigerated for 10 minutes.

Meanwhile, for the chili mayonnaise, mix all ingredients together.

Put rice in bowls, press lightly and drizzle a little of the marinade. Season baby spinach with a little rice wine vinegar, peanut oil and some sea salt.

Arrange salmon, edamame and baby spinach on top and garnish with the chili mayonnaise, sesame seeds and the greens from the young onion. Serve the Poke Bowl with salmon, baby spinach and chili mayonnaise.
