For my favorite fish recpet Indian-style pollock, I like to use sea fish that I briefly steam in some olive oil and vegetable soup and then season with garam masala, an Indian spice blend, and cream.
Season with a little salt if desired.
This goes perfectly with fragrant basmati rice.
Just adjust the quantity to the number of guests….
