For the pomegranate parfait, squeeze oranges and limes. Cut pomegranates in half and juice with a citrus juicer. Mix orange, lime and pomegranate juice, blend well with cassis and cream cheese in a hand mixer until creamy. Add sugar and vanilla sugar to taste.

Pour into a metal bowl and place in the freezer for about 4 hours. Remove the parfait, thaw slightly and chop coarsely. Then whip with a mixer until creamy and place in a piping bag fitted with a large star nozzle.

Pipe the parfait into very well chilled glasses, garnish and serve.
