Have fun preparing this mushroom dish!

Rinse the dried men’s mushrooms and soak them in cold water for one night. Drain. Coarsely crush the coriander seeds and cardamom pods. Clean and trim the vegetables. Put the beef sausage together with the chopped vegetables through the coarse disc of the meat grinder, mix with the spices and the egg whites. Stir the mixture into the soaked mushrooms. Pour in the cold beef or vegetable soup, let it boil and cook at low temperature for at least 1 hour. After that, let it simmer for about half an hour and then strain it through a very fine straining cloth or sieve. Serve in cups with a piece of bread or cheese biscuit.
