rinse with cold water, dry and cut in half. Remove the skin from the onion and cut into fine cubes. Clean the young onion and cut into fine slices. Remove the seeds from the bell bell pepper, clean it and cut it into small cubes. Chop parsley and chives. Peel, clean and coarsely grate the potatoes, mix with half of the kitchen herbs and season with iodized salt and nutmeg. Season the meat on both sides with iodized salt and pepper.

Roast on both sides to the point, in the same frying pan brown diced peppers. Fry potato rösti in hot clarified butter on both sides until golden brown. Heat frying pan with a little bit of rapeseed oil, sauté onion until translucent. Add the chanterelles and fry lightly. Add spring onions and green pepper and pour in a little veal stock, simmer briefly and season with a little iodized salt. Pour in whipped cream, reduce a little and fold in remaining kitchen herbs.

Serving : Arrange the Rösti in the middle of a flat plate, place the chops on top, form the creamed chanterelles on top, sprinkle the diced peppers on top and garnish with a bunch of herbs.
