Instructions:

Season the meat cut into pieces with salt, pepper, 5 crushed garlic cloves, 1 chopped pepperoni, the clove and a little bit of vinegar. Let it marinate for about half an hour.

Chop the spring onion, onion and the remaining garlic. Fry them lightly in a little oil, then add the coriander, anise and thyme, then the meat and the sliced mango.

Let the meat brown slightly, then add the second pepperoni.

Cut the melanzani, zucchini and peeled potatoes into pieces. Add them to the meat together with the Massale (or the colombo powder), dissolved in a little bit of water, cover the whole with water and do it with the lid closed for about 50 min (stir from time to time!). Taste the seasoning.

4. 5 min before the end of the cooking time, add the juice of a lemon.

Info: Colombo powder: remove the peel from 3 cloves of garlic and crush them. Chop 2 fresh chiles into small pieces. Mix both in a small baking bowl form 1/2 tsp ground turmeric, 1/2 tsp ground coriander and 1 tsp mustard powder and stir thoroughly with the other ingredients.

Tip: Zucchini is a type of squash, so it’s low in calories, high in vitamins and easy to digest – just the thing for a light meal!
