Instructions:

In a large pot, bring plenty of salted water to a boil and cook the egg noodles in it according to instructions (4-5 minutes) until al dente. Drain the pasta and leave to drain. Meanwhile, cut the pork into fine strips and season with salt and pepper. Finely chop garlic and ginger. Cut the chili pepper in half lengthwise, remove the seeds and slice finely, as well as the green onions. Heat the peanut oil in a wok pan. Add the seasoned pork strips and stir-fry briefly on all sides, stirring repeatedly. Remove again and set aside. Now sauté the chopped tomatoes together with the green onions, garlic, ginger and chili in the wok for about 1 minute as well. Then mix in the meat again and season with fish sauce, soy sauce and turmeric. If desired, season with chili sauce. Add the sprouts and bring to a boil. Mix in the drained egg noodles and arrange in deep plates or bowls.
