For the pork knuckle, simmer the knuckle in boiling salted water for about 30 minutes. Pour off part of the water.

Cut the rind in a check pattern, taking care not to cut through the muscle meat. Clean the root vegetables and cut them into pieces.

Rub the meat with salt, caraway and marjoram and fry with the vegetables and apple cut into pieces.
