Rinse stilts, dry them. Score each pork rind crosswise. Season all around. Sauerkraut, onion cubes, spice ingredients, apple juice and fat in flakes in a casserole form. Put pork knuckles on top. Cover and cook at 225 degrees for 1 1/2 hours. Remove stilts and continue roasting on the broiler for half an hour. In between, turn once to the other side. Season sauerkraut, keep warm.

Serve with parsley potatoes.

Tip: Instead of clarified butter, you can also use butter in most cases.
