For the pork tenderloin in mustard-onion sauce, wash the tenderloin, pat dry and remove any silver skin. Then cut into equal-sized, not too thin slices.

Peel the onions and cut into thin slices. Wash the leeks and cut them into thin rings. Heat the oil in a pan and sear the pork tenderloin for about 5 minutes on all sides.

Then remove the meat from the pan and set aside. Clean the mushrooms and cut them into slices. Then fry the bacon cubes in the drippings, add the mushrooms, onions and leeks.

Add the vegetable soup, mustard and whipping cream and bring everything to a boil. Season to taste with salt, pepper and herbs de Provence. Then thicken the sauce with a little cornflour. Preheat the oven to 175 degrees.

Grease a baking dish with a little oil, put the pork tenderloin pieces in it and pour the sauce over them. Cover the baking dish with aluminum foil and put it in the preheated oven for 45 minutes.

For the last 15 minutes, remove the aluminum foil. Wash and chop the parsley and sprinkle over the pork tenderloin in mustard and onion sauce just before serving.
