Instructions:

For the pork tongue, slowly boil the tongue with greens and spices until tender. When the tongue is soft, let the meat cool in the broth and then skin it.

For the anchovy sauce, sauté the finely chopped anchovies and capers in a little oil. Mix flour and sour cream and add. Season the sauce with wine and lemon juice.

Slice the tongue and put it into the anchovy sauce. Let it simmer for a while over low heat.

Sprinkle with parsley before serving.
